1/2 cup ground chia seeds
1 1/2 cup oat flour (just put oats in blender)
1 t baking soda
1/4 t salt
1/2 cup butter (can do 1/4 butter and 1/4 applesauce)
1/2 cup brown sugar
2 eggs
2 1/3 cups smashed bananas
1 t vanilla
1/2 cup nuts (optional)
Heat oven to 350 degrees. Mix all wet and dry ingredients separately, then mix together. If I don't have enough Banana then I use applesauce to make the 2 1/3; then I use the 1/2 butter in with 1/2 applesauce. (just because I want the banana taste to come through, otherwise I substitute applesauce for all of butter). I use an 8 1/2 inch round plan and it fits perfectly and no need to grease. Bake about 30 minutes, or until tooth pick comes out dry.
