Apple Pie

7 cups sliced apples
1 T lemon juice
1/2 cup white sugar
1/2 cup brown sugar
1/4 cup all-purpose flour
1 t cinnamon or pumpkin pie spice
1/4 t salt
1 tablespoon butter

Preheat oven to 450º F. In a large bowl, toss apples with lemon juice. In a small bowl, combine the sugars, flour and spices. Sprinkle 1/4 cup over pastry in pie plate, add remainder of sugar mixture to apples; toss to coat. Place apples in pie plate and shape into a mountain. Dot with 1T of diced butter. Cover with top crust. Bake for 15 minutes. Reduce oven temperature to 350º F, and continue baking for 40 to 45 minutes.

Pie Crust:
2 cups all-purpose flour
1/4 cup sugar
1/4 teaspoon salt
2 sticks butter - 1 T, chilled and diced
6 T milk

In a large bowl, combine flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk, 1 tablespoon at a time, until mixture forms a ball. Shape into two flatten balls and wrap in plastic. Refrigerate 30 minutes . Roll dough out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.
