How to Soften or Cook Rice Noodles
1. Put the rice noodles in a large bowl.
2. Bring some water to a boil (enough to cover the noodles).
3. Pour water over the noodles, gently stir, cover
4. Allow the noodles to sit in the hot water, stirring occasionally, until done. They should be cooked through but not mushy. Depending on the thickness of the noodles, this could take 3-8 minutes.
5. Drain the noodles in a colander. If you do not plan to use the noodles right away, keep them in a bowl of cold water and drain when you need them.
