Carrot Cake

2 cups flour
2 tsp. soda
2 tsp. baking powder
2 tsp. cinnamon
 dash salt
2 cups sugar
1 ½ cups oil
3 cups carrots (grated)
4 eggs
½ cup pecans (chopped)

Sift together the flour, soda,baking powder, salt, and cinnamon. In a separate bowl, mix sugar and oil. Beat well. To the sugar and oil mixture, add the carrots and beat in one egg at a time. Add the dry ingredients and pecans. Beat well; pour into a well-greased loaf pan. Bake at 350 degrees for 45 minutes. Do not remove from the pan. When cool, top with icing.

ICING - Blend together: 4 oz. cream cheese ½ box powdered sugar ¼ stick butter 1 tsp. vanilla
