1 egg, beaten
1 T chopped onion
2 T chopped mushrooms*
1 cup chopped frozen broccoli
1/4 cup cooked brown rice
garlic powder
salt
Sauté
onion, mushrooms, and broccoli until tender. Stir in brown rice and
egg. Sprinkle with garlic powder and salt. Cook until the egg is set.
*
Mushrooms can be cleaned, chopped, and then frozen. I spread them on a
parchment paper covered plate until frozen then store them in a freezer
bag.
