Chicken Stir-Fry
1 Tbs oil
2 cups thinly sliced carrots
1 cup fresh pea pods
1 1/2 cups broccoli florets
1/2 lb chicken, cut in small pieces
2 cups cooked rice
2 Tbs lite soy sauce
2 tsp cornstarch
1/8-1/4 tsp garlic powder
1/8-1/4 tsp ground ginger
1/8 tsp pepper
Directions:
1. Sauce, in small bowl stir together water, soy sauce, cornstarch, garlic powder, ground ginger and pepper
2. Preheat skillet over mediu heat. Add vegetables; stir-fry over high heat about 3-4 minutes, until soft
3. Remove vegetables from skillet
4. Add chicken to skillet. Stir-fry until meat is cooked. Add sauce and veggies, cook until bubbly about 2-3 minutes
5. Serve over rice
